“True” Lemon Aspen or Pigeon Berry is a medium-sized rainforest tree that is endemic to Queensland.
A pale lemon coloured fruit with a tough star shaped core – textured much like an apple core. The fruit exudes an incredible tropical citrus aroma and a very strong acid flavour of lemon and tropical spice characters.
Lemon Aspen has a wonderfully tart lemon taste with a hint of grapefruit.
100g of lemon aspen equals something close to the juice, zest and pulp of about 6 large lemons!
Lemon Aspen work as flavouring in both sweet and savoury products. Use in sauces, dressings, jellies, chutneys and relishes. Lemon aspen is a common flavouring in juice, mineral water, cordial and fruit wine.
In its dried form, Lemon Aspen can also be ground into a spice mix or for cocktail/gin flavouring and decorating.
Lemon aspen was regularly consumed by Indigenous communities in north-eastern Queensland, although details are scarce.
Lemon aspen is a rich source of folate, iron and zinc, also has superior antioxidant capacity compared to a blueberry.
